"Crepe" Cakes - How Cool Looking Is That?!?!


I told myself that I wasn't going to make any sweets this weekend. Not that I don't crave them daily. I just thought I'd spend the time cleaning instead of making another mess. Well, that went out the window as soon as I looked through my June/July issue of Taste of Home Magazine. They had a Red Velvet Crepe Cake that looked so cool. I just had to see if I could make it.

I'm not much of a Red Velvet cake person (sorry.) So I used what I had. A white cake mix and milk chocolate frosting. How easy is that!
  • Make the cake mix according to the package.
  • Heat a lightly greased skillet over medium heat.
  • Add 1/4 cup of cake batter into skillet.
  • Lift and tilt pan to coat the bottom of the pan.
  • Cook until top appears dry, turn and cook another 15 - 20 seconds.
  • Cool on a wire rack.
  • Repeat with the remaining batter.
  • Now frost a Cake "crepe" and add another cake "crepe" and repeat. You can make it as tall as you would like.
Pretty cool looking, don't you think?

A Salty Sweet Bite of Deliciousness


Mickey over at Monster Mama calls this Texas Chicken Brittle. But that name scares me =o) I'm not sure what I would want to call it but let me tell you - it's sweet, it's salty, and it's a whole lot of yum. Look at the ingredients, how could it not taste delicious? But maybe the thought of chocolate covered Fritos scares you. Don't let it. Try it. Your kids (and you) will love it!

Ingredients:
* Fritos
* Pretzels
* Cashews (or any kind of nut)
* Milk chocolate
* White Chocolate
* mini M&Ms

  1. Line a large cookie sheet with a thin layer of Fritos.
  2. Sprinkle broken pretzels over the top.
  3. Drizzle melted chocolate over the top. (I will shake it up a little bit at this point next time I make these. And yes, there will be a next time!
  4. Sprinkle with cashews.
  5. Drizzle melted white chocolate over the top.
  6. Sprinkle with M&Ms.
  7. Let cool so the chocolate can harden.
  8. Break into pieces and enjoy!

Cinnamon Roll Bites with Maple Frosting

I'm in love. Yep. You read that right. I'm in love! With these!

Holy smokes. That's about all I can even say about these delicious bites of pure yumminess!

What you will need:
  • cinnamon rolls in a can
  • oil (to deep fry)
Open the can of cinnamon rolls.
Cut them into quarters.

Heat oil to 370 degrees.
Cook cinnamon roll bites in oil for about 34 seconds on each side.

Place onto paper towels.

For the maple frosting (from here)
  • 1 1/2 Tbls. maple flavoring
  • 4 cups powdered sugar
  • 3 Tbls. butter, softened
  • 3/4 Tbls. hot water
Whip up all the ingredients.

Drizzle (or pour if you live in our house) over warm cinnamon roll bites.

Now eat up and enjoy!

Homemade Super Balls

Super balls. Every kid loves 'em. Who knew you could make 'em. We wanted to see if they would work. Okay.... FUN! It was a gooey and sticky process but look how cool they are!!!

You will need:
  • 1 Tbls. glue (Elmers glue, NOT craft/tacky glue. Just trust me on this!)
  • 1/2 tsp. Borax
  • 1 Tbls. cornstarch
  • 4 Tbls. warm water
  • food coloring
  1. Put the glue and food coloring in one cup. Mix it up.
  2. In another cup mix the Borax, cornstarch and warm water. Stir.
  3. Add the water mix to the glue mix and stir it up! It'll be a gooey blob at this point.
  4. Dump the liquid out of the cup and roll into a ball. You'll have to do this for awhile. It'll be pretty mushy and a little gross feeling at first. Keep rolling. If it seems too "wet" roll it on a paper towel to get some of the liquid off.
Keep rolling and there you have it... homemade super balls!

Just a side note - in the morning or when they sit for awhile, they will flatten out somewhat. We stored ours in the plastic Easter eggs to help keep their shape. But just roll them again when you pick them up and they will go back to being a ball.

Oreo Cheesecake Pretzel Bites & a Swagbucks Tip

You read the name, right? So I don't need to explain why I had to make these when I saw them. The name says it all. And with ingredients like this? I'm in!


Ingredients:
(Found on Picky Palate)
* 21 Oreo cookies
* 3 ounces cream cheese
* pretzels
* melting chocolate (either white chocolate or milk chocolate)

Grind up the Oreos in your food processor. (Good luck not making a mess with this step... or is it just me???)

Add cream cheese and blend until it's a very thick paste consistency.

Take about a teaspoon of Oreo mixture and roll into a ball. Place on top of pretzel.

Top with another pretzel.

Dip in chocolate.

That simple.

Even better tasting!

If they last longer than a day (which mine did not in my house, I would store them in the refrigerator.  It might make the pretzels soggy, though.  I'll have to make them again to see =o)  But I don't think so.

Broccoli Salad


A co-worker of mine introduced me to this salad a couple of years ago. I think it's one of my favorite salads of all time. I make a big batch of it and eat it, seriously, for breakfast, lunch and dinner! It's crunchy and full of flavor!

Ingredients:

* 1 cup Miracle Whip

* 1/4 cup sugar

* 1 Tbls. rice vinegar

* 3/4 cup sunflower seeds

* 10 slices cooked bacon

* 1 head of Broccoli, cut up

* raisins


You can add as much of the ingredients as you would like. I love the sunflower seeds so I add a little more than 3/4 cup.


Mix everything together and chill.



Doesn't that look tasty?!?!

Eat up and enjoy!!!

Grandmother Paul's Sour Cream Pound Cake


This has got to be one of my
absolute, most favorite desserts of all time. It's amazing! Not too sweet and completely satisfying! This is also one of my Dad's favorites! I made this for him a couple of years ago for Christmas and it quickly went on his wish list for Christmas, his birthday and Father's Day. And how could it be wrong? It's from Paula Dean!

I'll tell you now that it's definitely not a low fat recipe. Maybe that's why it tastes so fantastic?!?!

Ingredients:
From Paula Dean

* 1 tsp. vanilla
* 1/2 tsp. baking soda
* 6 large eggs
* 3 cups flour
* 1 cup sour cream
* 3 cups sugar
* 2 sticks butter

Preheat over to 325 degrees.
Cream together butter and sugar. Add sour cream and mix.
Sift baking soda and flour. (Like I
ever do this. Not!)
Alternately add flour mixture and eggs (beating well after each addition).
Add vanilla.
Pour into a greased and floured
bundt pan.


Bake for 1 hour and 20 minutes.

Cool for about 20 minutes and then remove from pan.


You could drizzle a light frosting of glaze over this if you wanted, but it surely doesn't need it. It's great just the way it is!

Kid Friendly Dinner Tag Menu

Tag! I'm it! Yeah! I love to play games. I'm a kid at heart. I'll admit it. So when Tiffanee over at One Crazy Cookie tagged me, I was thrilled and honored. Thrilled because, like I said, I like to play =o) And honored because I love her blog. She posts the best recipes!

What is this virtual tag I speak of? Well, it's simple. It started around Easter where you were supposed to post a meal of all pictures of posts you already have done. Simple, right? Well, Easter came and went but who wants to stop having fun?! So it turned into a Mother's Day tag with Kristen over at Frugal Antics of a Harried Homemaker and the Tiffanee tweaked it to a Cinco de Mayo meal (yum!) So my spin on it is a Kid Friendly Meal. Since I'm always looking for meals my kids will eat (and fun ways to server them!)

So our meal would consist of these fun veggie Aliens and Sloppy Joe flying saucers.


We would have fruit vampires as a side dish (because everyone needs their fruit!)


Or we might have this strange looking veggie called broccoflower. It kind of goes with the space theme, doesn't it???


My son is a huge fan of hard boiled eggs so I like to have some of these around in the fridge all the time.


And for dessert we would eat these delicious root beer float popsicles!


Oh, or maybe our Fakin' and Eggs made from Tootsie Rolls and caramels! That would be a good end to a good meal!
