S'more Pie Roll Up Cookies, A Virtual Cookie Swap & A Giveaway




I love cookie swaps, don't you?  They remind me of Christmas, which is my favorite holiday EVER.  And who doesn't love cookies?  (If you don't, don't answer that.  We might not be able to be friends.)

This is a little different type of cookie exchange.  You don't have to bake (but you also don't get to go home with a boat load of treats.  That's the bad part.)  But everyone participating today is posting a great cookie recipe along with the giveaway.  It's like a cookbook of cookie recipes, with pictures, right here for you.  Jackpot! 

And are you ready for this cookie recipe?  It's the mother of all cookie recipes!  It's easy, not many ingredients and DELICIOUS!  All of my favorite things for a cookie =o)

If you haven't guessed by now, I am a HUGE s'more fan.  I love the combination of marshmallow, milk chocolate and graham cracker.  We've made a lot of different s'more variations.  We've done:

S'more Stuffed Dough Boys
Mini S'more Hand Pies
S'more Cookie Tarts
Chocolate Chip S'more Cookies
Heart S'more Cookies

I told you we loved s'mores!

This idea came after we made our Mini S'more Hand Pies.  I had some extra pie crust and didn't want to toss it out.  Seriously!  That would be like throwing away gold.  I love pie crust!


S'more Roll Up Cookies

* pie crust
* 1/2 cup marshmallow cream
* 2 Tbsp. cream cheese, softened
* 2 Tbsp. sugar
* 1/2 cup milk chocolate chips
* 1/2 cup crushed graham cracker crumbs

Roll out your pie crust.  We just used the store bought kind because I don't know how to make pie crust =o)  Cut it into rectangles about 1 1/2 inches wide by 4 or 5 inches long.  (It's totally up to you based on how fat you want them to be.

Mix the marshmallow cream, cream cheese and sugar together.  Spread over pie crust rectangles.  Sprinkle with chocolate chips and roll up.

Sprinkle one side with the graham cracker crumbs and bake in a 425 degree oven for about 6 - 10 minutes.  Again, this depends on how big you make them.  You want them slightly golden brown.

They are delicious and gooey and perfect!

October Foodie Pen Pals


Have you heard of Foodie Pen Pals?  I hadn't heard of it until last month and my first thought was "what the heck?  How could I have not been involved in this sooner?"  I was so excited!

We all know I love mail.  I love sending mail, whether it's an Easter egg, a bottle filled with the Oregon Coast or baked goods.  And getting mail?  I LOVE IT!!!
 
The Lean Green Bean started the Foodie Pen Pal program back in September 2011.  It began with 30 participants and has quickly grown to over 1000 participants in the US alone.  How cool is that?!?! 
 
So what is the Foodie Pen Pal program?  You sign up and on the 5th of each month you get an email with who your pen pal is.  You email them, asking what they like, are allergic to, etc.  Then by the 15th of the month you send them a package filled with delicious foodie type goodies.  They can be homemade, store bought, fun, healthy, delicious and sugar filled (depending on your pen pals likes.)  Awesome, right???
 
My Foodie Penpal (who bought for me) was Meaghan.  Look what she sent to me!
 
 
It was filled with homemade s'more cookies
 
 
And so much more!  There was peach salsa, apple spread, fig preserves, blueberry acai gummy pandas, a pumpkin spice bar, vanilla sugar scrub, PopChips and some English Breakfast tea.  Amazing, right?

I am in love with their Sugar Lip Scrubs.

Move Over Camping Food! Hello PUDGY PIES




One of the best things I've done with my kids is taking them camping.  I was a little afraid the first time we went.  It was just me and my two, very young, children.  We had so much fun.  Now, 5 years later, it's the highlight of our summer when we go camping.  We load up the car with great food, bikes and scooters and a deck of cards, and we're off.

When we discovered Dough Boys I thought I had hit the jack-pot.  Then when we discovered Campfire Eclairs?  Holy heck.  I didn't think it could get any better than that.

Then my nephew told me about Pudgy Pies.  I thought he was making it up until my Dad reminded us that my Grandfather (who was a patent attorney) helped put the patent on the first pie iron.  How cool is that?  So I was determined to figure out what these were.

Are you ready for this?  This is a pie iron.
You fill it with awesome and delicious food and then cook it over the camp fire.  Easy and so simple.  And FUN!
 But look what you can make.  The possibilities are endless!
Butter the outsides of two pieces of bread (like you're making a grilled cheese sandwich.  Add whatever "inside" you want in your "pie".  My son?  Guess......  yep, spaghetti =o)
Place the other piece of bread on top (buttered side out) and place in your pudgy pie iron.
Close the pie iron.  This will squeeze off the crust (yeah!)
Remove the crust and now cook over your campfire.  You'll have to turn it often to get it golden brown on both sides.  Don't put it right in the fire but you want it pretty close.  The pie iron needs to get nice and hot.
Are you ready for this???  Voila!
You have a Spaghetti Pudgy Pie!
Now be creative!  How about a Grilled Ham and Swiss Cheese Pudgy Pie?
I think my favorite was a Bacon, Egg and Cheese Pudgy Pie.

Then we tried making Pudgy Pies with Cresent Dough instead of bread.  Yowza!!!  I'm hooked!
This is what my daughter wanted for breakfast... a Bacon Filled Pudgy Pie =o)  (That's my girl!)
And for dessert?  How about a S'more Pudgy Pie?
It was delicious!  The marshmallows get all gooey and the chocolate melts and the Cresent dough cooks and it's like heaven in your mouth!
And even though this isn't technically a Pudgy Pie, guess what we discovered you could cook in a pie iron.
You guessed it!  Cinnamon Rolls cooked over a campfire.  We just took camping food to a new level!
