Parmesan Panko Crusted Chilean Sea Bass


A short while ago I wrote a review of Certified Steak & Seafood Company and talked about the best Fillet Mignon I have ever tasted.  Today I bring you an amazing (and super easy) recipe for Parmesan Panko Crusted Chilean Sea Bass.   And it was delicious!

 


Parmesan Panko Crusted Chilean Sea Bass
  • Equal parts Panko crumbs and grated Parmesan cheese
  • salt and pepper to taste
  • lemon pepper to taste
  • 2 eggs
  • Frying oil (I used vegetable)
Crack the eggs into a bowl and beat.

In a separate bowl, add the Panko crumbs and Parmesan cheese.  Add salt, pepper and lemon pepper and stir.

The Sea Bass Steaks were amazing and huge. 


I cut them into thirds.


Dip each Sea Bass strip into the egg and then into the Panko mixture.  Make sure you coat evenly and thoroughly.


Make sure your oil is good and hot!  You can add a drop of water or a sprinkling of the Panko crumbs to the oil to see if it immediately starts to sizzle.  If it doesn't, wait a bit longer and let your oil get hotter.

Cook the Sea Bass in the oil until it is golden brown, then flip over.  How long you have to cook them depends on how thick your fish is, but make sure you don't over cook them.

Place on a plate covered with a paper towel to drain and serve hot. 


They were delicious!  Moist and tender on the inside and crunchy on the outside.  And I loved the added taste of the Parmesan cheese.

Card Making and some R&R

How do you relax? Some people exercise, some cook, some eat, and some craft.  I'm a crafter.  I love it.  I started making cards and scrapbooking years ago and it's a hobby/love that's stayed with me. It gives me a chance to "zone out" and not think about all the things in life that weigh me down.  Unfortunately, lately I haven't had very much time to make cards or scrapbook.  But that doesn't mean I don't love it and that I'm not still thinking about it.

There are so many fun ideas out there in blog land.  I have some friends who think looking at other ideas is "cheating", but I'm all for it.  Why re-invent the wheel, right?  =o)  And with adorable ideas like this out there, who wouldn't want to replicate them?

I just love these cards.  And I'm amazed at how easy some of them are to make.  You just need the right supplies.  (Isn't that always the case?!)  But with card making it can be a complicated as you want it to be.  You can go out and buy everything, or you can start small and buy a couple of things that you would need and go from there. 

I'm a huge fan of using rubber stamps.  Do you have any?  I have waaaaay too many.  But I love them.  I see a cute set and what do I do?  I buy it.  

We did a card swap on our blog last year.  It was so much fun!  You can see all the fun cards that others made here.

See?  Everyone can do it!  And shortcuts are good; very, very good. 

At Rubber Stamps Online you can find all sorts of rubber stamps.  And not just for card making.  They have teacher rubber stamps and address stamps and tons more.  Again, shortcuts are good.

Valentine's Day Food and Fun


I had a bunch of fun Valentine's Day ideas to do this year.  But then life happened and here I sit.  Valentine's Day is a little less than 3 weeks away and I have nothing.  Except the flu and two sick kids.  It's been a party around my house this past week (I say very sarcastically!)  On the bright side, I guess I have a couple of weeks to get better and kick it into gear.  Until then, I'll leave you with some fun (and delicious) Valentine's Day ideas we have done in the past.

Cinnamon Chip Cream Cheese Bread


I made a slight change to the recipe.  The Wednesday Baker made it with blueberries instead of cinnamon chips.  Blueberries are good but we aren't big blueberry fans here.  And let's be honest... cinnamon chips rocks.  So it's maybe not as healthy but man, oh man.  I can't even tell you how delicious it was!

And it is called bread.  So to me, that means I can eat it for breakfast.  Right??? 

Make sure you read the directions before you start, just so nothing sneaks up on you (like beating the egg whites or adding the glaze before you cook it.

Cinnamon Cream Cheese Bread

Bread
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • 2 egg yolks
  • 1 1/2 cups flour
  • 1 tsp. baking powder
  • 1/3 cup milk
  • 2 egg whites
  • 1/4 cup sugar
  • 1 bag Hershey's Cinnamon Chips 

Cream Cheese Filling
  • 8 ounces cream cheese, softened
  • 1/2 cup sugar
  • 1 Tbsp. flour
  • 1 egg

Glaze
  • 2 Tbsp. sugar
  • 1/2 tsp. vanilla
  • 1 tsp. water
Make the cream cheese filling first.  Beat all of the ingredients until smooth.  Set aside.

Make the glaze.  Mix all ingredients and set aside.

So far, so good, right?

In a large bowl, cream the butter and sugar together until light and fluffy.  Add the vanilla and mix.  Add the egg yolks (the whites will be used later so save them!)  and mix well.  Alternate adding the flour and baking powder and the milk.  Mix after each addition.

In another bowl, beat the egg whites until soft peaks form.  Add the 1/4 cup sugar, 1 Tbsp. at a time, until egg whites are stiff.  

Fold the egg whites into the batter mixture. All all but about 1/2 cup of the cinnamon chips.  Stir.

Add the 1/2 cup of cinnamon chips to the cream cheese mixture (if you want.)

Pour half of the batter into a greased and floured loaf pan.  Top with the cream cheese layer and spread to make it even.  Add the rest of the batter and spread it out.  

Pour the glaze over the uncooked batter.



Cook in a 350 degree oven for 55 - 60 minutes.



Let cool completely before taking out of the pan.  



Oh man.  It was amazing!  I didn't let it cool completely because I wanted to eat a slice (or two) when it was still a little warm.  It was "fragile" to handle while warm but oh so worth it.  It was amazing!!!  (Did I already say that???)

I loved the crunchy, sweet top.
