M&M Cookie Cups





Whenever I go to my Dad's I bring treats.  He loves them and I love baking for him!  I wanted to make something Eastery but not too complicated.  I love all the Easter cookies out there but I'm not a decorator (sigh.)  I wish I were but it's sooooo hard and I don't have the patience to do all that work.  So this is what we made.... M&M Cookie Cups from Something Swanky.  I used the Easter M&Ms to make them look more springy.  I think they are cute.  (Is a cookie cute???)

M&M Cookie Cups

* 1 cup butter, softened
* 3/4 cup sugar
* 1 tsp. salt
* 2 tsp. vanilla
* 2 cups flour
* melting chocolate
* M&Ms

Cream the butter and sugar in a stand mixer.  Gradually add the salt, vanilla and flour.  Scoop by teaspoons into a mini muffin pan.

Push the middle down with your thumb to make a well.

Bake in a 300 degree oven for 20 minutes.

Melt the chocolate in the microwave in 30 second intervals.  I put mine in a zip lock bag to melt.  Then cut a small piece of the corner off and it's easy to squeeze out. 

When the cookies are done, let cool slightly.  Fill the wells with chocolate and top with M&Ms.  Let cool completely before eating.  Delish!


And... because I can't leave well enough alone... ever!  I loved the chocolate but I wanted something that didn't completely harden.  So we used chocolate buttercream frosting =o)
