Peanut Butter Mallow Cookie Treats

I wasn't quite sure what to call these.  Baking and Boys, where I found this recipe, called them Peanut Butter Marshmallow Chocolate Covered Ritz Crackers.  That was kind of a long title for me =o)  She got them from Taste of Home who called them Yummy Cracker Snacks.  That wasn't descriptive enough for me.  So I came up with this somewhat lame title: Peanut Butter Mallow Cookie Treats.  It's tough being original!

When I first saw the recipe I wasn't sure if I would like them.  I know peanut butter and marshmallow ares popular together but I've never had it before.  I don't know why.  Then I remembered how tasty a s'more made with a peanut butter cup was so I decided to make these.  And I am very happy I did.  They were delicious!!!  And so easy to make.

And simple ingredients.  Always a plus!

Peanut Butter Mallow Cookie Treats

* Peanut butter
* Marshmallow cream
* Ritz crackers
* Guittard milk chocolate (it's my favorite)

Lay out your Ritz crackers.  Spread peanut butter on half of them and marshmallow cream on the other half.

Make a sandwich out of them.

Melt Guittard chocolate in the microwave for 30 seconds.  Stir and cook for another 30 seconds.  Stir until smooth.

Dip crackers in chocolate and set on waxed paper to harden.

YUM!!!

Enjoy!

Those are an absolute FAVE around here. Except I usually just do only peanut butter without the marshmallow creme. I've done both ways, and my hubby tells me he likes it without the marshmallow the best. I have to make them for every single holiday or I get into trouble! Ha.

I saw this recipe a few months ago on another blog, but they were called PMS Cookies. hahaha!!! I IMMEDIATELY went out that day and bought all the ingredients. Believe it or not, I STILL haven't made them. (That's mostly because I'm afraid I'd eat them all in one day!) Now that you reminded me about them, I just may have to try them this week.

Oh my. I'm kinda angry at you right now because this recipe is too easy and I already have all the stuff in my pantry. Bring on the stretchy pants!
