Peanut Butter Chocolate Chip Cookies and a Secret Recipe Club Tribute



The Secret Recipe Club is more than just a recipe club, it's a community.  And it is with a sad heart that we are all posting today.  The Secret Recipe Club is paying tribute to one of it's own, Daniel from The Haggis and the Herring.  Daniel passed away suddenly September 17th, leaving behind his wife, Meredith, and his three children.  I have no doubt in my mind that Daniel is still cooking and baking while he watches over his family.

Meredith wrote an amazing tribute to her husband here.  I admire her strength and courage as she wrote down her memories and shared her wonderful story with all of us.

My heart hurts for his family.  I can't even comprehend the sadness you must be feeling.  Know that you are in our thoughts!

As a tribute to everything Daniel and His wife have brought to the blogging world and to the Secret Recipe Club, we have chosen to make one of their recipes from their blog, The Haggis and the Herring, Peanut Butter Chocolate Chip Cookies.

It is no wonder these wonderful cookies are Daniel and Meredith's son Jacob's favorite cookies.  They are wonderfully delicious with peanut butter, chocolate chip and oatmeal.  A trifecta of awesomeness!


Peanut Butter Chocolate Chip Cookies 

* 1 1/4 cup flour
* 1 cup quick-cooking rolled oats
* 1/2 tsp. baking soda
* 1/2 tsp. salt
* 3/4 cup packed brown sugar
* 1/3 cup butter
* 1/3 cup peanut butter
* 1/4 cup buttermilk
* 1/3 cup milk chocolate chips

Preheat oven to 350 degrees.  Line 2 cookie sheets with parchment paper.

In a stand mixer, mix butter, brown sugar, peanut butter and buttermilk.  Mix until smooth.  Add flour, baking soda and salt and mix well.  Stir in rolled oats.  Now stir in chocolate chips.

Roll dough into 1 1/2 inch balls and place on cookie sheet 2 inches apart.  Flatten cookies with a fork.

Bake for about 10 minutes or until edges are lightly golden brown.

Immediately remove cookies from cookie sheet and cool on a baking rack.

Everyone loved these cookies and it was hard to swat the kids hands away every time I turned around.
