Pumpkin Pie Rice Krispie Treats


I don't even know what to say about these bad boys.  The title says it all, pumpkin pie rice krispie treats.  Does it get any better than that?  And what a fantastic way to use these deliciously awesome pumpkin pie marshmallows!  

Try them.  Enough said.

Pumpkin Pie Rice Krispie Treats
Source: Baking Bites

Graham Cracker Crust
* 1 1/2 cups graham cracker crumbs
* 6 Tbsp. butter, melted
* 1/4 cup sugar
* pinch of salt

Rice Krispie Layer
* 4 Tbsp. butter, room temperature
* 1 bag Pumpkin Spice Marshmallows
* 6 cups Rice Krispie cereal

Preheat oven to 350 degrees.

In a bowl, combine the ingredients for the graham cracker crust.  Mix well and press into a greased 9x13 pan.

Bake for 10-12 minutes or until lightly browned.  Cool completely.

In a large microwave safe bowl, add butter and marshmallows.  Nuke on high for about 60 seconds.  Stir well.  If marshmallows aren't all melted and gooey, nuke for another 30 seconds and stir.  Add cereal and mix well.

Scoop on top of the graham cracker crust and press down.  I always spray my hands with cooking spray so it doesn't stick to me.  This works great!

If you can't find these amazing marshmallows in your area, no worries.  You can still make these delicious treats.  Just use a bag of "regular" marshmallows and 2 tsp. Pumpkin Pie Spice mix.

Make sure your crust is buttery enough so that it packs well in the bottom of the pan.  Otherwise you'll end up with a pan that looks like this when you try to cut them =o(  Darn it.  But they were still delicious!

I love your idea of adding a crust to it. I used those marshmallows to make them the other day but never thought to do that! The flavor of the 'mallows is yummy, isn't it?
