Chocolate Pastel Mint Cookies


I saw these on Pinterest before Christmas and immediately pinned it. Don't they look yummy? I just love, love, love those pastel mints. I have only seen them at the Pepperidge Farm stores but my co-worker tells me they are available in the store. But I've never seen them =o(

They were delicious!  I mean seriously - how can you go wrong with chocolate and mint, right?  And perfect for Easter (I thought.)

Chocolate Pastel Mint Cookies

* 1 cup sugar
* 1/2 cup butter, softened
* 1 egg
* 1 1/2 tsp. vanilla
* 1 1/2 cups flour
* 1/2 cup unsweetend cocoa
* 1/4 tsp. baking powder
* 1/4 tsp. baking soda
* small pastel mint kisses

Preheat oven to 350 degrees. 

Combine sugar and butter and beat in mixer for about 5 minutes.  Add egg and vanilla.  On low, add flour, cocoa powder, baking powder and baking soda.  Beat until combined.

Shape dough into 1 inch balls and place about 2 inches apart on an ungreased cookie sheet.  Bake for 9-11 minutes or until set.  When done, set pastel mint kisses on top of each cookies and transfer to a wire rack to cool.

those are really pretty, and do you know I have never ever eaten one of those mints I don't think. I should try them:)
