Greek Salad and a Taste of Summer



I love summer time.  All the fresh veggies!  (I can do without the fruit, but the veggies I'm thrilled about.)  And tomatoes?  Fresh off the vine?  Pure heaven!

This Greek Salad is something I could eat everyday of the summer.  It's light and crisp and totally delicious!


Greek Salad

*cucumbers, chopped
* tomatoes, chopped
* pitted Calamata olives, chopped
* Feta cheese
* 2/3 cup olive oil
* 1/3 cup white wine vinegar
* 1/2 tsp. salt
* 1/4 tsp. dried oregano, crushed

Look at all the frsh ingredients!

You'll have to let me know what you thought of the tots! I loved them. I recently tried some sweet potato tots....ewwww!!! You won't be reading about those on my blog (though, I do think we should have a 'warning' page!). I've got a bunch of your cookie recipes saved for this upcoming Christmas....can't wait to try them out!!! In other news....I can finally comment again....it hasn't let me for about 4 months everytime a try (weird?!?!?)

The tomatoes are on, but a little sparse this year. I hope I get a lot more before frosts come. I am definitely going to try this. I love all of the ingredients. I usually think of using my tomatoes for salsa, so this is a great way to change things up. Thanks Erin
