Circus Animal Cookie Truffles



Do I even have to explain why I made these?  I mean, seriously!  Look at them.  So stinkin' cute!

Circus Animal Cookie Truffles
  • 1 bag of Circus Animal Cookies
  • 1 tub of cream cheese frosting
  • white and pink melting chocolate
  • sprinkles (rainbow nonpareils)
I just love the look of Circus Animal Cookies.  They are so pretty and fun.


In a food processor, crush the cookies into dust.  (You really don't want big pieces of cookie because then they taste gritty and not as deliciously creamy).


Add the frosting and combine.

Use a small cookie scoop and scoop out balls onto a cookie sheet lined with waxed paper.   It will be sticky but try to make them into balls.

The directions said to freeze for 3 hours but I think this was too long.  When they thawed, the chocolate cracked (I'm going to blame it on this) so I would say to freeze for about 15 or so minutes only.

In a microwave safe bowl, melt the chocolate in 30 second bursts, stirring after each burst.

Dip cookie balls into chocolate and place on a sheet of waxed paper.  Immediately sprinkle with nonpareils. 


I dipped about half of them in white chocolate and half of them in pink chocolate.  It makes them look just like Circus Animal Cookies doesn't it?!
