St. Patrick's Day Crinkle Cookies

 
I've had this recipe pinned since October.  They were titled How the Grinch Crinkled Christmas Cookies.  Loved it!   So of course, I wanted to make them, but I never got around to.  So now it's March and I thought they were a perfect St. Patty's day cookie.
 
 
St. Patrick's Day Crinkle Cookies

* 1 box of French Vanilla Cake mix
* 2 eggs
* 6 Tbsp. butter
* green food coloring
* 1 cup powdered sugar
* 1 tsp. cornstarch

Preheat oven to 375 degrees.

Melt butter and set aside to cool.

In a stand mixer, mix the cake mix, cooled butter and eggs.  Add the green food coloring (make it as green as you want.)
 
 
In a separate bowl, combine the powdered sugar and cornstarch.

I used a medium scoop and plopped balls of batter into the powdered sugar mixture.  Roll them around to coat and place on a cookie sheet lined with parchment paper.
 
 
Bake for about 8-10 minutes.  They will look undone but that's good.  You don't want to over cook them!  They will look slightly puffed up.
 
 
Let sit for about 1 minute and then transfer to a cooling rack.

How fun are these great cookies!  Don't they look perfect for St. Patty's Day? 
 
 
Not only are they fun and great for St. Patrick's day, they were delicious!  And so easy.  That's a pretty good combination in my book.

St. Patrick's Day Marble Cookies


It's never a good sign when it's 8:30 am and I'm almost finished with a diet Coke.   (Or maybe it is, I guess it depends how you look at it.)  =o)  Yesterday morning I was woken up at 6:00 am to "Mommy, mommy.  Knock knock.  Mommy, knock knock."  "Mommy, you're supposed to say who's there."  6 AM!!!  Holy smokes.  Here we go.  So we did the whole knock knock thing for about 30 minutes - giggled and had fun and then started a very busy day.

Part of our fun yesterday was building a giant fort in the family room.  I love that my kids do this - even though they use every blanket in the house (including the ones off the beds).  But my son wanted to sleep in said fort last night.  My daughter had a little friend stay the night and they wanted to sleep on the floor in the family room on air mattresses.  My question to them, "you guys will be good sleeping downstairs all night?"  Their eyes got wide and they all looked at each other.  "NO!" I heard in unison.  "You have to sleep down here too."  Well, we only have 2 air mattresses and the fort covered the couch.  That left the small couch.  (Are they still called loveseats?)  They told me I could sleep there.

Needless to say, we were up at 6am and I can barely move I'm so sore.  But the kids had a blast and it was a night to remember. 

So what do I do when I'm dog tired and every muscle in my body hurts???  I bake.  It makes me feel better!

We picked these very cool and St. Patty's looking cookies - Marble Cookies.  When I saw these last year over on Red Couch Recipes I immediately bookmarked them.  (Pinterest wasn't around then - gasp!)  And I'm so glad I did.  They are delicious!!!!  And they look so fun!  Thanks Joni for another fantastic recipe!!!

St. Patrick's Day Marble Cookies

1 Cup softened butter
1 cup sugar
1 egg
1 tsp. almond extract (or you can use peppermint)
1/2 tsp. baking soda
2 1/2 cups all purpose flour (plus 1 Tbsp. for later)
1/3 cups milk chocolate chips
2 Tbsp. baking cocoa
Green foold coloring
Extra sugar for rolling dough in

Cream tigether the butter and sugar (about 5 minutes).  Add egg and almond extract.  (I just love the smell of almond extract!)  Beat until thoroughly mixed.  Add baking soda and flour, a little at a time, and mix thoroughly.

Divide dough in half.

Add green food coloring to one half.

Melt chocolate chips (being careful not to burn them).   Add melted chocolate and cocoa powder to other half and mix until blended.  If it's not stiff enough, add 1 Tbsp. of flour.


I used my Pampered Chef small scoop and made scoops of green dough and then scoops of the chocolate dough.  Roll each scoop into balls.  I had a fantastic helper with this =o)

Then take a green ball and a chocolate ball and roll into a larger ball.

Roll each ball in sugar and place on a silpat or cookie sheet lined with parchment paper.

Flatted each ball slightly.

Cook in a 350 degree oven for 8-10 minutes.  Cool on a cooling rack.

My kids LOVED these cookies.  They loved how they looked (who wouldn't) but the taste was fantastic!  The combination of the almond extract and chocolate is fantastic!

Irish Potato Candy



It's almost here - St. Patrick's Day. I'm not super into St. Patrick's Day but as a Mom I try to celebrate (and educate) my kids about most holidays and special events. That's important, right?

I wasn't quite sure what to make for this special day. St. Patty's Day sugar cookies are always a hit in our house but I'm a little tired of sugar cookies after Valentine's Day. And my kids wouldn't go near corned beef and cabbage if I paid them. So we decided on Irish Potato Candy. There are two "traditional" types of Potato Candy and I thought they both sounded tasty, so we made both.


Irish Potato Candy

2 (1 lb.) boxes powdered sugar
1/2 cup hot mashed potatoes, drained
peanut butter (you can use creamy or chunky)

- Boil your potatoes like you always do for mashed potatoes.
- Measure out about 1 cup of potato chunks and add to mixing bowl.
- Beat until crumbly.
- Start adding the powdered sugar. Don't be alarmed when it turns to liquid. This is normal.

- Just keep adding powdered sugar until it is thick and spreadable.

- Sprinkle waxed paper with additional powdered sugar. Make sure there are no "blad" spots. This mixture is pretty sticky and will stick to the paper. I used this handy dandy Pampered Chef pastry roller. It worked great! (My kids also like it for Pay Doh) =o)

- Take a baseball sized ball of mixture and roll out on waxed paper.

- Spread with peanut butter.

- Roll up
- Refrigerate for a couple of hours, then slice.

For the second variation:
- After mixture is thick, roll into walnut sized pieces shaping them to look like potatoes.

- Let sit on the counter for a couple of hours or refrigerate. This makes the cinnamon not get moist when you roll them in it. I'm not sure how - it's just the law =o)
- Roll in cinnamon.

Store in the refrigerator.

I'm not sure which one I liked more. I really like the taste of the peanut butter but the ones in cinnamon look so darn cool.

Everyone has seen this saying, right? It's nothing new. It's been around forever. It basically means "Ireland Forever!" Nice, right...

Growing up it was hard having the name Erin on St. Patrick's Day. This is what everyone did to this wonderful Irish saying...

Darn kids!

St. Patrick's Day Craft Project




At my house, anything is a potential craft supply. My kids make crafts out of everything from paper towel rolls and milk jugs to plastic cups and shoe boxes. My kids are craft maniacs! Did I do that to them??? Probably, because I also love to do crafts and now that my kids are getting older, we do crafts all the time. It's an excellent way to spend time with them, use some creativity and imagination and have fun.

I've started organizing craft play dates with my kid's friends. It's a time that they can play and have fun but is somewhat structured too so it's not total chaos. The kids love it and get to go home with something that they made.





Most of the craft supplies I've been buying I get from Oriental Trading Company. I used to go to Michaels but found that the prices at Oriental Trading Company can't be beat. You have to buy them in packs of 12. But this gives us extra for friends to come over (or if we mess up on one.) And for 12 they are usually around $5 or $6. That's a pretty good deal!


We made St. Patrick's Day crafts today. I thought they looked pretty cute and they turned out great.

Each packet comes with directions so you can make it exactly like the directions say to, or you can personalize it a little and make it look a little different.
