Margarita Breakfast Pizza


My friend Trish contributed this amazingly delicious recipe for our Egglands Best Egg-Spect the Best Brunch.  How yummy does this look?!?!  I'm all about breakfast pizza!  BTW - have you entered the giveaway here yet from Egglands Best Eggs?

Margarita Breakfast Pizza
(from my co-worker Trish)

* 1 (12 inch) prepared pizza crust
* 1/4 cup crumbled bacon (I cheat - I use the real crumbled bacon from Costco)
* 7-8 eggs
* 1/2 cup milk
* 1 1/2 Tablespoons chopped green onion, divided (it actually calls for basil but my family is not a fan)
* 1/8 teaspoon black pepper
* 2 plum tomatoes,thinly sliced
* 1/2 cup (2 ounces) shredded mozzarella cheese
* 1/4 cup (1 ounce) shredded Cheddar Cheese

1. Preheat oven to 450 degrees F.   Place pizza crust on 12-inch pizza pan. Bake 6 - 8 minutes or until heated through.

2.Meanwhile, coat large skillet with nonstick cooking spray. Cook bacon over medium-high heat until crisp (if not using already prepared version). Remove from skillet to paper towels; cool.  Crumble bacon.

3. Combine eggs, milk, 1/2 teaspoon onion (basil) and pepper in medium bowl. Coat same skillet with cooking spray. Add egg mixture. Cook over medium heat until mixture begins to set around edges. Gently stir eggs,allowing uncooked portions to flow underneath. Repeat stirring every 1 to 2 minutes or until eggs are just set. Remove from heat.

4.Arrange tomato slices on warmed crust. Spoon scrambled eggs over tomatoes.  Sprinkle with bacon and onion and top with cheese. Bake 1 minute or until cheese is melted. Cut into six wedges. Serve immediately.

Pickled Eggs and Beets


We just loved the Pickled Peperoncini Eggs that my friend made so much that we had to try another pickled egg recipe. How cool looking are these, right?  Perfect for our Egglands Best Egg-spect the Best Brunch we had.  (BTW - have you entered the giveaway here?)

Another co-worker overheard me talking about the peperoncini eggs and she asked if I had ever had pickled eggs in beet juice. I hadn't heard about this before so I was intrigued. I love pickled beets!

These are so easy to make and so fun!

Pickled Eggs and Beets
* 2 cans pickled beets
* hard boiled eggs
* large jar

Put your hard boiled eggs in a jar.  I used a canning jar because I wanted to make sure it had a lid.  Beet juice is horrible if spilled.  Pour 1 can of beets and juice into the jar (on top of the eggs).  Add the juice of the second can (but not the beets.  Go ahead and eat those.)  =o)


Put the jar in the refrigerator for a couple of days.  The longer they sit, the deeper the color goes.

Dutch Babies Recipe


Is this the strangest thing you've ever seen? I thought it was. What a crazy casserole. I guess it's kind of like a souffle.
Thanks to my friend Renee for this delicious breakfast recipe for our Egglands Best Egg-Spect the Best Brunch.  So many fun and delicious egg recipes!
Dutch Babies
* 6 eggs
* 1 1/2 cups milk
* 1 Tbsp. vanilla
* 1 1/2 cups flour
* 3/4 stick melted butter
 * dash of salt
Preheat oven to 375 degrees.
Melt butter in cake pan.
In a separate bowl, mix eggs, milk, vanilla, flour and salt.  Pour in cake pan and bake for 30 - 35 minutes.
It grows and grows and grows. Like magic =o)
Serve with any toppings you would like: maple syrup, cinnamon and sugar, bacon and cheese, powdered sugar and lemon juice.
This reminds me of a German Pancake my Mom always used to make.  YUM!

Cheesy Egg and Hashbrown Casserole


One of the best things about casseroles? They reheat perfectly and make excellent leftovers! This casserole is no exception and is fantastic the next day!

My friend Ben (of Ben's Pickled Eggs) brought this amazing casserole to our Egglands Best Egg-spect the Best Brunch.  Doesn't it look delicious?!

Ben does a told of creating in the kitchen and doesn't measure anything.  (How do people cook like that???  I need measurements, folks!)  So these are approximates and can be changed depending on your likes and dislikes.

Cheesy Egg and Hashbrown Casserole

* 1 onion, diced
* 1 green pepper, diced
* 1 red pepper, diced
* 1 cup sliced mushrooms
* 1 cup cooked ham, cubed
* 1 cup cooked bacon, crumbled
* 1 cup cooked sausage, crumbled
* 1 bad shredded hash brown potatoes
* 2 cups shredded cheddar cheese
* 8-10 eggs
* 1 cup milk
* salt and pepper to taste

Spray a deep casserole dish (he used a huge pan) with non-stick cooking spray. 

Chop all of your veggies and meats.


Add cooked veggies to the frozen hash browns and put in the bottom of your casserole dish.


Spread the meats evenly over the top of the hash browns.
 
Beat together the eggs and milk.  Add salt and pepper to taste.
 
Pour over meats.

Bake in a 350 degree oven for about 45 minutes.  Sprinkle the cheese evenly over the top and return to oven.

Cook another 15 - 30 minutes until firm in the middle.  The bigger the casserole, the longer it will take to cook.

Serve hot and enjoy!

If I've said it once I've said it a thousand times... my kids and I LOVE eggs. We do. And we eat a TON of them. So when I was contacted by Egglands best to do a review of their eggs (and a giveaway) I was thrilled. And not just a review. This is the mother of all reviews! BLT Deviled Eggs


Deviled eggs. They are like little cups of goodness surrounded by deliciousness. Am I right? Do we have deviled egg eaters out there? Or is that just dating me?  Every family function we have includes deviled eggs.  They're a staple - kind of like milk and oxygen.

My son loves deviled eggs.  Which makes me very happy.  I love it when he says "Mom, can I have some eggs with my dinner?"  Seriously!  Do kids do that???  My daughter always asks if she can have ice cream with dinner.  Huh.  But I don't like it so much when he asks me 5 minutes before dinner is served and I don't have any hard boiled eggs in the fridge.  Normally I do, but there are times when I fail.  Then I discovered these.


Egglands Best Hard Cooked Peeled Eggs.  They are already hard boiled and peeled and so darn easy.  My kids saw the bag and immediately tore into it and started eating the eggs.  (Proud Mom moment.)  Now when my son says "can I have eggs for dinner" at the last minute, I can say "of course".

I wanted to spruce up our deviled eggs this time so I made them a little differently.  I mean, how could I resist?  They had bacon in them for heaven's sake!

BLT Deviled Eggs

* 8 hard cooked eggs
* 1/3 cup mayo
* 2 Tbsp. ranch dressing
* 3 slices bacon, cooked and crumbled
* 4 cherry tomatoes, chopped
* 2 Tbsp. shredded lettuce

Cut eggs lengthwise in half.  Remove yolks; place in medium bowl.  Mash with a fork.

Add may and dressing; mix well.  Stir in bacon and tomatoes.


Fill egg whites with yolk mixture; top with lettuce.

Don't they just look delicious???

Ben's Pickled Eggs


What the heck, right? Who's Ben and why would we want to make pickled eggs?! When I think of pickled eggs I think of old movies with a huge jar of nasty looking eggs on a bar counter top. Right? But I'm here to school you. 
My co-worker and friend (thus the Ben) makes these delicious pickled eggs all the time! Don't they look so cool? Kind of like lemons when you first look at them.  And they are so easy!
You will need:
* hard boiled eggs
* a jar of peperoncini juice (you can eat the peperoncinis)  =o)
That's it!  Two ingredients!
Take the shells off of your hard boiled eggs.  (We love hard boiled eggs!)
Put them in the peperoncini jar, making sure the juice covers the eggs.
Put in the refrigerator for at least a couple of days.  The longer the better!
The eggs soak up the great yellow-green color of the juice and the delicious peperoncini flavors without the spicy hotness!  They are so good you can eat them whole, or cut some up and put them on a green salad.  And how good would they be in an egg salad sandwich?!

Cream Puffs




I'm amazed at how many amazing recipes are out there that use eggs in them.  I love eggs.  My kids love eggs.  So it's fun to look and see what else we can make using eggs.

My friend Renee helped me out with this delicious recipe.  A classic that still makes my mouth water every time I eat them.  
 

Cream Puffs

* 1 cup water
* 1/2 cup butter
* 1 cup all purpose flour
* 4 eggs

Heat oven to 400 degrees.

In a 2 1/2 quart saucepan, heat water and butter to a rolling boil.  Stir in four and reduce heat to low.  Vigorously stir over low heat about 1 minute or until mixture forms a ball.  Remove from heat.  Beat in eggs, all at once, and continue stirring until combined.

On ungreased cookie sheet, drop dough by slightly less that 1/4 cupfuls about 3 inches apart.   Bake for 35 to 40 minutes or until puffed and golden.  Cool away from draft, about 30 minutes.

Make one of the fillings (listed below).  Cut top third of each puff off and remove any strands of dough.  Fill puffs with filling and replace top.  Cover and refrigerate until serving.  Sprinkle with powdered sugar before serving.


Egg Nog Fluff Filling
* 1 package vanilla instant pudding and pie filling
* 1 cup milk
* 1 tsp. rum extract
* 1 tsp. ground nutmeg
* 1/4 tsp. ground ginger
* 2 cups whipping cream
* powdered sugar

In a large bowl beat pudding mix, milk, rum extract, nutmeg and ginger with a hand mixer on low speed until combined.  Add whipping cream and beat on high speed for 1 to 2 minutes or until soft peaks form.

Peppermint Whipped Cream Filling
* 2 cups whipping cream
* 1/4 granulated or powdered sugar
* 1 tsp. peppermint extract
* food coloring (if desired)

In a large mixing bow, beat ingredients with electric mixer on high speed until stiff peaks form.

Coffee Whipped Cream Filling
* 2 cups whipping cream
* 1 1/2 tsp. instant coffee granules or crystals

In a large mixing bowl. beat ingredients with a hand mixer on high speed until stiff peaks form.

These can be served so many ways.  The picture above is with custard and fresh strawberries inside.  But you can also shake it up with some chocolate frosting or ganache on top.  Delicious for brunch or dessert =o)
