Pumpkin Kiss Pies



I've had these bookmarked for a long time.  I'm not sure why it took me so long to make them.  How can you go wrong with pie crust and chocolate? 

Pumpkin Kiss Pies

* refrigerated pie crust
* Kisses (I used Pumpkin Spice)
* egg white
* sugar

 Have you seen these?  Amazing!

Wrap the Kisses.  Flour the counter or mat that you are working on before you unroll the pie crust.  You don't want it to stick.  Cut out circles in the pie crust.  I used a 3 inch circle cookie cutter.  (I think it was 3 inches.  I'm not a ruler.)

Bring 2 sides up and pinch together.  I put some water around the edges in hopes of keeping the seams together while they were cooking.  (It didn't really work so I need to figure that part out better.)

Bring the other two edges up to form and thing like this.


Pinch the seams together and then brush them with an egg white wash.  Sprinkle with sugar.

Huh.  That's not what I was hoping for.  Most of the opened up.  Does anyone know how to prevent this?
Bake in a 350 degree oven for about 15 minutes.  Picky Palate said to cook them for 20-28 minutes but that was too long for us.

But they tasted oh, so good!  Perfect little pie bites!  I'm guessing they would be amazing filled with milk chocolate Kisses!

Chocolate Chip Cookie Pie {Secret Recipe Club}


Where has September gone?  With the start of school (which means going back to work for me) the month has flown by.  I kind of panicked last weekend when I looked at the calendar and thought "oh no, it's almost reveal day!  Get on it!"  But fear not.  I baked (and ate) and I'm here to bring you a delicious recipe =o)

This month for the Secret Recipe Club I was assigned the blog: The Boys Made Me Do It.  Yeah, I thought as soon as I saw the email.  This is a blog that I know and love.  Cara is a Mom of 3 boys.  (Yep, three!)  She loves to cook and even though her husband is a chef (totally cool), she does most of the cooking.  How does that work?  =o)

I don't want to say her recipes are simple, because that doesn't sound like a compliment.  They are "real" recipes and I just love that about her site.  They are recipes that I look at and think "I totally want to make that!"  So many times I look at a blog and think the recipes looks good but the million ingredients or fancy, far away spices or something make it totally unrealistic for this single mom of two. 

I really wanted to make her Cinnamon Bun Muffins because come on, who doesn't want Cinnamon Bun Muffins?!?!   Then I spotted her 7 Up Biscuits.  YUM!  But what did I decide on?  Chocolate Chip Cookie Pie (of course.)  I mean seriously!  A chocolate chip cookie INSIDE a pie crust?  I'm in!

* 1 unbaked 9' pie crust (homemade or store bought)
* 2 large eggs
* 1/2 cup all purpose flour
* 1/2 cup sugar
* 1/2 cup brown sugar, packed
* 3/4 cup butter, softened
* 1 cup semi sweet chocolate chips
* 1 cup chopped pecans (I left these out)

Preheat oven to 325 degrees.

I use Marie Callender's pie crusts.  They are delicious and so much easier than making your own.  Not that I wouldn't want to make my own.  I just don't.  So there.


Beat eggs in a large mixing bowl on high speed until foamy.  Beat in flour, sugar and brown sugar.  Beat in butter.  Stir in chocolate chips and pecans and spoon into the unbaked pie shell.


Bake for 55 to 60 minutes or until a knife inserted halfway between edge and center comes out clean.


Cool on wire rack or serve slightly warm.

Delicious!  I've never made a cookie pie so I wasn't totally sure what the consistency was supposed to be.  The knife came out clean so I assume it's done.  But, of course, I had to cut into it when it was warm and it was more "gooey" than I thought but it was AWESOME!  We loved it and will for sure be making this again!

Mashed Potato Pie - Oh My!



Some days I just want something delicious and "comforting" that's not sweet. I know! Who is this talking? But believe it or not, I would take a big bowl of mashed potatoes or mac and cheese over most desserts. So I stood in the kitchen and was looking through my cupboards and then the freezer and nothing came to mind. Then I saw the package of maple bacon and it hit me... loaded mashed potatoes. Yum! But then I saw the pie crust on the top shelf of the freezer and I'm pretty sure I heard harp music playing. Grand idea! Mashed Potato Pie! It can be done. I can do it!

I don't really have a recipe to share. I'll just fill you in on what I did. Change it. Spice it up some. Do whatever you like. Just know.... mashed potatoes plus pie shell equals heaven!

I didn't make my own pie crust (because I don't know how to do that.) I buy the Marie Callender Pie Shells. They are awesome =o)

I cooked the pie shell according to the instructions.


Then I made mashed potatoes. Make them however you normally do. I don't use milk when I make my mashed potatoes. Instead I use ranch dressing. We are ranch dressing nuts in my house. We, I mean my kids, eat it on everything. So I whipped potatoes with butter and ranch dressing.

Cook your bacon. Make sure it's crispy and drain all the fat. Doesn't that look tasty?

Add shredded cheese and stir it all up. Put it in the pie shell.

Top with more shredded cheese. (Because seriously, can you ever have too much cheese???)

And bake in a 350 degree oven until it's heated through.

Looks tasty doesn't it?


Yes, that's more ranch dressing on the side. Because, like I said, we love ranch.

This is a great dish to make ahead of time. You can put it all together and refrigerate it, then add cheese on top right before baking. And it's great the next day too!

S'more Brownie Pie

In keeping with my whole s'more theme this summer I thought I'd make these. I'm not sure what to call it so we'll call it a s'more brownie pie. I though they were pretty darn tasty but the real test was if my kids liked them. I don't like to make many desserts that my kids won't eat because that means I have to eat them... ALL of them. And that's never a good idea.

I found these somewhere in blog land and I apologize profusely to the blogger who posted these first because I can't remember who you are and I hate to steal others ideas without at least giving them credit. (Of course I steal other's ideas but at least I give them credit, right?) So I am truly sorry for not being able to find you again so that I can say thank you and that you are s'more genius for coming up with this idea.

They are super easy to make and will get you lots of ooohhhs and aaahhhs from the family!

What you will need:
* graham cracker pie shells (I used the small, individual sized ones)

* brownie mix
* ingredients to make the brownies
* miniature marshmallows

You can, of course, make your own graham cracker shells and your own brownie batter from scratch, but let's not get ridiculous here. Why reinvent the wheel in my book.

Make the brownie mix according to the package.

Add some batter in the pie shell until it is about 1/2 to 3/4 full. You don't want the cooked brownie to go over the sides.

Bake according to the directions (reducing the time, of course, since you are not making an 8x8 pan. I can't remember how long I cooked them. How horrible am I?!)

When they are done, take them out of the oven and top with mini marshmallows. (Don't wait for them to cool. Do this while they are still hot.)

Now put them back into the oven for about 4 minutes. Just until the marshmallows are golden brown.

What do you think? When my son gave me the thumbs up I knew they were a winner.

They went pretty fast in my house but I tried to store them in an air tight container. SO here's to another great s'more creation. After all these different ways to make s'mores it's hard to go back to the traditional s'more. I think I've been ruined!
